Ingredients
- 200gr Pasta (spaghetti or linguine)
- Zest of 1 unwaxed lemon
- Juice of half a lemon
- 40gr Grana Padano (shop here), finely grated
- 2 tbsp extra virgin Olive Oil (shop here)
- Salt
Directions
- Cook the pasta in salted boiling water until al dente.
- Reserve a cup of the pasta cooking water before draining.
- In a bowl, mix the lemon zest, lemon juice, olive oil and Grana Padano
- Add the hot pasta and a little pasta water, stirring until creamy.
- Adjust consistency with more pasta water if needed.
- Serve immediately with extra lemon zest if desired.
