Ingredients

  • 2 Chicken breasts
  • 6 thin slices Speck (shop here)
  • 40gr Grana Padano (shop here), finely grated
  • 2 tbsp extra virgin Olive Oil (shop here)
  • Salt and black pepper

Directions

  1. Preheat the oven to 180°C.
  2. Slice each chicken breast lengthways to create a pocket.
  3. Fill each pocket with speck slices and grated Grana Padano.
  4. Season lightly with salt and pepper.
  5. Heat olive oil in an ovenproof pan and seal the chicken on both sides.
  6. Transfer the pan to the oven and bake for 18–20 minutes until cooked through.
  7. Rest for 5 minutes before slicing and serving.
