Ingredients
- 2 Chicken breasts
- 6 thin slices Speck (shop here)
- 40gr Grana Padano (shop here), finely grated
- 2 tbsp extra virgin Olive Oil (shop here)
- Salt and black pepper
Directions
- Preheat the oven to 180°C.
- Slice each chicken breast lengthways to create a pocket.
- Fill each pocket with speck slices and grated Grana Padano.
- Season lightly with salt and pepper.
- Heat olive oil in an ovenproof pan and seal the chicken on both sides.
- Transfer the pan to the oven and bake for 18–20 minutes until cooked through.
- Rest for 5 minutes before slicing and serving.
