Bresaola, Arugula, and Grana Padano Salad, known in Italy as Insalata di Bresaola, Rucola e Grana Padano, is a classic Northern Italian dish that celebrates simplicity and quality ingredients. Thin slices of delicate bresaola are paired with fresh rocket, shavings of Grana Padano and a drizzle of extra virgin olive oil and lemon. Ingredients

  • 120gr Bresaola (shop here), thinly sliced
  • 60gr Rocket leave
  • 30gr Grana Padano (shop here), shaved
  • 2 tbsp extra virgin Olive Oil (shop here)
  • Juice of half a lemon
  • Freshly ground black pepper

Directions

  1. Arrange the bresaola slices on a large plate, slightly overlapping.
  2.  Scatter the rocket leaves evenly over the bresaola.
  3. Add the Grana Padano shavings on top.
  4. Drizzle with extra virgin olive oil and lemon juice.
  5. Finish with a light grind of black pepper and serve immediately
