Orecchiette with Friarielli and Napoli Sausage

This is a southern Italian-inspired pasta dish full of bold but familiar flavours. Bitter green friarielli and rich sausage are a classic combination, especially in Naples and the surrounding area.

Ingredients

  • 320g Orecchiette
  • 450g Napoli Sausage (shop here)
  • 180g Friarielli in Oil (shop here)
  • Extra Virgin Olive Oil (shop here)
  • 1 Garlic clove
  • Chilli flakes, optional

Directions

  1. Bring a large pan of salted water to the boil and cook the orecchiette until al dente.
  2. Remove the sausage from its casing.
  3. Cook the sausage in a frying pan until browned, breaking it up with a spoon.
  4. Add the garlic and a drizzle of olive oil.
  5. Stir in the friarielli and cook for a few minutes until warmed through.
  6. Drain the pasta, keeping a little cooking water aside.
  7. Toss the orecchiette with the sausage and friarielli.
  8. Add a splash of pasta water if needed.
  9. Finish with chilli flakes if using, then serve hot.
