Orecchiette with Friarielli and Napoli Sausage
This is a southern Italian-inspired pasta dish full of bold but familiar flavours. Bitter green friarielli and rich sausage are a classic combination, especially in Naples and the surrounding area.

Ingredients
- 320g Orecchiette
- 450g Napoli Sausage (shop here)
- 180g Friarielli in Oil (shop here)
- Extra Virgin Olive Oil (shop here)
- 1 Garlic clove
- Chilli flakes, optional
Directions
- Bring a large pan of salted water to the boil and cook the orecchiette until al dente.
- Remove the sausage from its casing.
- Cook the sausage in a frying pan until browned, breaking it up with a spoon.
- Add the garlic and a drizzle of olive oil.
- Stir in the friarielli and cook for a few minutes until warmed through.
- Drain the pasta, keeping a little cooking water aside.
- Toss the orecchiette with the sausage and friarielli.
- Add a splash of pasta water if needed.
- Finish with chilli flakes if using, then serve hot.
