Smoked Scamorza & Speck Risotto
Smoked Scamorza & Speck Risotto, known in Italy as Risotto con Speck e Scamorza Affumicata, is a creamy and deeply flavourful dish inspired by Northern Italian cuisine. Arborio or Carnaroli rice is slowly cooked with vegetable stock and white wine, then enriched with savoury speck and cubes of smoked Scamorza that melt gently into the risotto. Comforting, aromatic and beautifully balanced, this authentic Italian recipe is perfect for an elegant dinner or a cosy meal at home.

Ingredients
- 320g arborio or carnaroli Rice
- 100g Scamorza (shop here), diced
- 80g Speck (shop here), chopped
- 1 small Onion, finely chopped
- 1L Vegetable stock
- White wine
- Olive Oil (shop here)
Directions
- Sauté onion and speck in olive oil.
- Add rice and toast briefly.
- Deglaze with wine, then add stock gradually, stirring until creamy.
- Stir in scamorza at the end and let it melt slightly before serving.
