Ingredients:
- 12 asparagus spears
- 6 slices of speck
- 2–4 eggs
- Olive oil, vinegar, salt, pepper
How to prepare:
1.Wrap 2 asparagus spears in 1 slice of speck. Pan-sear
or bake until just cooked.
2.Bring water with vinegar to a simmer. Crack eggs into
cups and gently poach (3–4 minutes).
3.Plate the asparagus bundles, top with a poached egg,
and season.
