These sausages which are very well made with the right consistancy of meat lacked the fennel flavour.

I was brought up on Carnevale products. In the late 60's, I think, we would get deliveries from Jimmy the Macaroni Man or Gennaro to give him his true name, before he set up South London's best Deli in Lewisham. Jimmy sold Carnevale cheese and later sausages.
They haven't changed much, the great depth of flavour is still present. I prefer these Carnevale to the other, newish player on the sausage scene, which just don't hit the mark. The Neopolitan style sausage with Fennel, are the closest I have found so far in London that are anywhere near the recipe that I like best, which is a butcher on the outskirts of Cassino, FR.
Well....possibly one of the finest sausages I've ever eaten. Pork and fennel is a match made in heaven and these are testament to that. They don't shrink, they produce hardly any fat and cook to perfection. I bet that on the barbie they would be even better.
My daughter in law who is half Italian made a traditional Napoli dish of sausage and friarielli which was delicious. Her Italian dad was very impressed with the ingredients.
