Carnival Gnocchi with Crispy Pancetta and Grana Padano, known in Italy as Gnocchi di Carnevale con Pancetta Croccante e Grana Padano, is a simple yet indulgent dish traditionally enjoyed during the Carnival period. Soft potato gnocchi are gently tossed with golden, crispy pancetta and finished with grated Grana Padano and black pepper. Ready in just 30 minutes, this recipe is perfect for a comforting midweek meal that still feels festive and unmistakably Italian.

Ingredients
800 g fresh potato Gnocchi
150 g Pancetta (shop here), diced
60 g Grana Padano (shop here), grated
Freshly ground black pepper
Directions
Cook the gnocchi in salted boiling water until they float, then drain.
In a large pan, heat olive oil and cook the pancetta until crispy.
Add the gnocchi to the pan and toss gently to coat.
Remove from heat and sprinkle with Grana Padano and black pepper.
Serve immediately.
