Ingredients
- 1 Ready-rolled shortcrust pastry
- 150 g Speck (shop here), diced
- 120 g Grana Padano (shop here), grated
- 3 eggs
- 200 ml Double Cream
- Freshly ground black pepper
Directions
- Preheat the oven to 180°C.
- Line a tart tin with the pastry and prick the base with a fork.
- Scatter the diced speck evenly over the pastry base.
- Whisk eggs, cream, Grana Padano and black pepper in a bowl.
- Pour the mixture over the speck.
- Bake for 35–40 minutes until set and golden.
- Allow to cool slightly before slicing.
