Carnival Savoury Pie with Speck and Cheese, known in Italy as Torta Salata di Carnevale con Speck e Formaggio, is a traditional baked dish enjoyed during the festive Carnival period. With a crisp shortcrust pastry base and a rich, creamy filling of speck, eggs and Grana Padano, this savoury pie is both simple to prepare and full of authentic Italian flavour. Ingredients

  • 1 Ready-rolled shortcrust pastry
  • 150 g Speck (shop here), diced
  • 120 g Grana Padano (shop here), grated
  • 3 eggs
  • 200 ml Double Cream
  • Freshly ground black pepper

Directions

  1. Preheat the oven to 180°C.
  2. Line a tart tin with the pastry and prick the base with a fork.
  3. Scatter the diced speck evenly over the pastry base.
  4. Whisk eggs, cream, Grana Padano and black pepper in a bowl.
  5. Pour the mixture over the speck.
  6. Bake for 35–40 minutes until set and golden.
  7. Allow to cool slightly before slicing.
