Ingredients
- 6 Eggs
- 200g Potatoes, boiled and cubed
- 100g Speck (shop here), cubed
- 1 Onion (optional)
- Olive Oil
- Salt & pepper
Directions
- Sauté onion (if using), then add potatoes and speck to the pan.
- Beat eggs with salt and pepper, then pour into the pan.
- Cook over low heat until mostly set, then finish under the grill or flip to cook both sides.
