Ingredients

  • 5 Eggs
  • 2 medium Potatoes, peeled and thinly sliced
  • 6 slices of Spianata (shop here), chopped
  • Olive Oil (shop here)
  • Salt & pepper

Directions

  1. Fry potato slices in olive oil until soft and golden.
  2. Beat eggs with salt and pepper.
  3. Add potatoes and Spianata to the eggs, then pour back into the pan.
  4. Cook on low, flip or finish under the grill until set and golden.
